Description: This introductory level course is designed for hobbyists as well as aspiring cake designers, to whom it is the first stepping-stone to becoming a professional cake designer. Students are encouraged to explore and experiment with a wide range of tools and materials in our creative hands-on classes while learning professional decorating skills and techniques.

During this course students will learn how to colour, cover, and decorate fresh cakes with rolled fondant. They will also work with Styrofoam dummies in order to create display cakes. They will be introduced to royal icing and working with gumpaste to expand their range of decorating possibilities. Piping skills and flood-work techniques will also be taught, which may be used to create decorations for both cakes and cookies.
Prerequisite: B1: Baking & Buttercream or equivalent. Please note students may take this course concurrent with DC1, as long as B1 is attended before the last day of DC1.

Description: This intermediate-level course is for students who have completed DC1: Introduction to Cake Decorating and wish to further their studies in the creation of custom designed cakes. Level 2 focuses on the proper leveling & dowelling techniques required to create stable multi-tiered stacked cakes; to reinforce these methods students work on fresh cakes and not Styrofoam dummies for their final assignment.

Students will continue to explore the design process and the many different tools and materials available. They will learn how to work with various size and shaped cakes and be introduced to intermediate levels skills such as brush embroidery and pressure piping, painting on cakes and the uses of petal, lustres and other decorative food colouring mediums. Studies in working with gumpaste will also continue.
Prerequisite: B1: Baking & Buttercream & DC1: Introduction to Cake Decorating, or equivalent.

Description: This class is designed for students who wish to learn about the business of cakes as well as advanced decorating techniques. Topics covered will include the process of cake design and sources of inspiration. Focus will also be on the use of Styrofoam as a sculptural as well as support element and how to enhance the look of custom-designed cakes with the use of cake toppers, risers & bases. Students will be encouraged to develop their individual style as they work on personalized class assignments.

The "Working with Wedding Planners and Event Designers" seminar will cover a wide range of topics crucial to the cake designer.
Prerequisite: B1: Baking & Buttercream, DC1: Introduction to Cake Decorating & DC2: Intermediate Cake Decorating & Design, or equivalent.

Cancellation Policy: Full payment is required at the time of booking for all classes. If paying by cheque, it must be received two weeks prior to the start of the first class. Students are responsible for ensuring there are no scheduling conflicts when enrolling in two or more classes. If you do not attend the class you are registered for, your payment will be forfeited. 7 days notice is required for class cancellations upon which a credit note will be issued and may be applied to future classes within a 6 month period. We do not provide makeup classes for missed sessions. Should a class be cancelled a full refund will be offered.
