Description:
This intermediate-level course is for students who have completed Cake Design 1 and wish to further their studies in the creation of custom designed cakes. Level 2 focuses on the proper leveling & dowelling techniques required to create stable multi-tiered stacked cakes; to reinforce these methods students work on fresh cakes and not Styrofoam dummies for their final assignment.

Students will continue to explore the design process and the many different tools and materials available. They will learn how to work with various size and shaped cakes and be introduced to intermediate levels skills such as brush embroidery and pressure piping, painting on cakes and the uses of petal, lustres and other decorative food colouring mediums. Studies in working with gumpaste will also continue.

Prerequisite: B1: The Art of Baking: Baking & Buttercream; DC1: Designer Cakes: Introduction to Cake Decorating; or equivalent.

Tools & Equipment: Students must bring in a fresh filled & masked cake ready to be covered with fondant on the first day of class. The cake must be correctly masked in Swiss meringue buttercream. Please note: Students must bring their cake on the THIRD day of evening classes.

The cake should be minimum 8" diameter, at least 3" tall (any shape such as round, square, petal or hexagonal) and on a 1/2" drum at least 2" wider than the cake. Please bring an appropriate size box to transport the finished cake home on the last day of class.

Cancellation Policy: Full payment is required at the time of booking for all classes. If paying by cheque, it must be received two weeks prior to the start of the first class. Students are responsible for ensuring there are no scheduling conflicts when enrolling in two or more classes. If you do not attend the class you are registered for, your payment will be forfeited. 7 days notice is required for class cancellations upon which a credit note will be issued and may be applied to future classes within a 6 month period. We do not provide makeup classes for missed sessions. Should a class be cancelled a full refund will be offered.
